Olive Fried Chicken


Olive Fried Chicken is a delicious, crispy dish that swaps traditional frying oils for heart-healthy olive oil. This recipe serves 4 and takes about 45 minutes.

Ingredients

  • 1 kg (2.2 lbs) chicken drumsticks and thighs, skin-on
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup extra virgin olive oil

Instructions

  1. Prepare the coating: In a bowl, mix flour, paprika, garlic powder, salt, and pepper. Place eggs in a second bowl and breadcrumbs in a third.
  2. Coat the chicken: Pat chicken dry. Dip each piece in flour, then egg, and finally breadcrumbs, pressing to adhere.
  3. Heat oil: In a large skillet, heat olive oil over medium heat until shimmering.
  4. Fry the chicken: Fry chicken in batches, 8–10 minutes per side, until golden and cooked through (internal temperature 165°F/74°C). Drain on paper towels.
  5. Serve: Enjoy hot with mashed potatoes or a fresh salad.

Tips

  • Use a thermometer to ensure oil stays around 350°F/175°C.
  • Rest chicken for 5 minutes before serving for juiciness.
